Roasted Red Pepper Hummus

Ingredients:

·        1 can (15 oz) garbanzo beans, drain and reserve liquid

·        2 cloves garlic

·        ¼ cup roasted red peppers

·        2 Tbsp olive oil

·        1 Tbsp fresh lemon juice

·        1 tsp cumin

·        ½ tsp salt

·        Red, yellow, and orange bell pepper wedges

 

Directions:

1.    In a food processor fitted with a blade, process garbanzo beans with garlic into hummus consistency.

2.    Add roasted peppers and process.

3.    Pour in olive oil, lemon juice, cumin, and salt.

4.    Process.  If a thinner consistency is desired, add bean liquid until desired consistency is achieved.

5.    Serve with bell peppers or pita bread toasted (bake at 350 for 15 minutes).

Tip: Traditional hummus contains tahini paste. For the flavor, substitute tahini for olive oil. Sesame seed oil can also be substituted. Buy these if you will make hummus on a regular basis as they are expensive.

Challenge: Spread this filling in pita pockets, tortilla shells, and naan as a spread and topper.
